Instructions
- Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with muffin cups.
- Cook the sausage in a skillet over medium heat, breaking it into crumbles. Drain the excess fat and set it aside.
- In a large mixing bowl, whisk together the eggs and milk until smooth.
- Gradually mix in the muffin mix, stirring until no lumps remain.

- Spoon the batter into the muffin cups, filling each about ¾ full.
