Description

Golden-brown sausage muffins are a versatile, savory breakfast option. Easy to make, customizable, and packed with flavor, these muffins are perfect for busy mornings or relaxed brunches.

Ingredients

Scale
  • 1 pound ground sausage – Choose spicy, mild, or sweet.
  • 2 cups muffin mix – Bisquick or any other preferred brand.
  • 2 large eggs – To bind the ingredients.
  • 1 cup milk – For moisture.
  • 1 cup shredded cheddar cheese – Sharp cheddar for a bold flavor.
  • Optional: ½ cup diced veggies – Bell peppers, onions, or spinach for added nutrition.
  • Optional spices – Paprika, garlic powder, or red pepper flakes for extra flavor.

Instructions

  • Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with muffin cups.
  • Cook the sausage in a skillet over medium heat, breaking it into crumbles. Drain the excess fat and set it aside.
  • In a large mixing bowl, whisk together the eggs and milk until smooth.
  • Gradually mix in the muffin mix, stirring until no lumps remain.
  • Fold in the cooked sausage, shredded cheese, and optional veggies or spices.
  • Spoon the batter into the muffin cups, filling each about ¾ full.
  • Bake for 18–20 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.

Notes

  • Storage: Store in an airtight container at room temperature for 2 days, or refrigerate for up to 5 days. For longer storage, freeze muffins for up to 3 months.
  • Reheating: Microwave for 30–60 seconds or bake at 350°F (175°C) for 5–7 minutes.
  • Customization: Swap regular sausage for turkey sausage or use plant-based alternatives for a vegetarian option.
